Macarons are naturally gluten free because they are made with almond flour.

A French Macaron is really a confection and less so a cookie. They are made from a base of almond flour, powdered sugar and castor sugar that is baked into a meringue. Two meringue shells are then joined together with a either a buttercream or chocolate ganache.
I really love to get creative with different flavor profiles! The result is a light shell with a thin, hard surface and deliciously soft and delicate middle. The filling brings the flavor, and imagination is really the only limit. These confections are gluten free.
